That's true - I never did it because the eye colour is barely noticeable (you literally have to move all the way to the screen). It wouldn't be a major issue either (except having a new UI similar to the fur colour one).
On the other hand, this might be something good to leave open for future stuff - for example, coloured lenses that could be dropped or bought (it'd make more sense than using dye, too).
At the moment, I do change players' eye colours upon request, if they're somewhat engaged with the rest of the game (read, I won't go out of the way to change it for a level 2 who might just disappear next day anyway). Since I actually have to manually figure out the correct palette you want and then use a debugging command to change it (read, it takes a bit of time), you're best asking me that only when I'm not doing much else.
